2012 Sawbuck Malbec has beautiful aromas of raspberry, boysenberry and brown sugar. Concentrated flavors of black cherry, mocha and smoky vanilla are supported by soft dusty tannins and a hint of rustic blueberry cobbler. Well balanced and elegant, this wine is a unique alternative to cabernet sauvignon or merlot. Pair this easy drinking wine with hearty Italian dishes, spicy paella, grilled meats or mushroom risotto.
The malbec grown at our Matchbook Vineyard was harvested September 24 and 26. 15% of the juice was bled off after crushing to concentrate flavors before fermenting with ES488 and native yeast. We pressed off the skins at dryness and barrel aged the wine for 18 months in French and American oak barrels. We added 23% Petit Verdot to improve mouthfeel and increase depth.
