||Medium Red Wine
The 2011 Sawbuck Malbec has enticing aromas of blackberry and chocolate raspberry layered over black pepper spice and leather. Concentrated flavors of black cherry, mocha and smoky vanilla are supported by soft dusty tannins and hints of rustic blueberry rhubarb cobbler. Well balanced and elegant, this wine is a unique alternative to cabernet sauvignon or merlot. It is the perfect wine for melt-in-your-mouth barbequed baby back ribs.
The Malbec grown at our Matchbook Vineyard was harvested September 29 and October 3. 10% of the juice was bled off after crushing to concentrate flavors before fermenting with ES488 and native yeast. We pressed off the skins at dryness and barrel aged the wine for 18 months in French and American oak barrels. We added 6% Chalk Hill Cabernet Sauvignon as well as Dunnigan Hills Tempranillo and Syrah to increase richness and depth.
