Tasting Notes:
One of our favorite blends is a big juicy Syrah and a robust Cabernet Sauvignon. The 2007 Matchbook Syrah is 91% Syrah and 9% Cabernet. A full-bodied red with fresh blueberry and black cherry fruit flavors from the Dunnigan Hills Syrah. The addition of 9% Russian River Cabernet Sauvignon adds loads of chocolate flavors as well as depth, richness and structure. Barrel aging contributes a touch of vanilla spice. Soft, rich and spicy, this big red wine will hold up to any grilled or roasted meat dish.
Vineyard Notes:
85% Dunnigan Hills Syrah from the Matchbook Vineyard, 6% Russian River Valley Syrah, 3% Chalk HIll Cabernet Sauvignon, 6% Russian River Valley Cabernet Sauvignon.
Production Notes:
The grapes were gently crushed and fermented in small temperature controlled stainless steel tanks. Specially selected yeast (Assmannshousen) was used to enhance color and flavor extraction without harsh tannins. Tanks were pumped over twice a day until nearly dry, then pressed and aged in oak barrels for 26 months. We like to use an assortment of French, Hungarian and American oak and only 20% new to avoid over-oaking. This wine was further enhanced by blending in 9% Cabernet Sauvignon to give it depth, richness and improve structure.
